It introduces the atmosphere of pre-war, entertaining and cabaret-style Nowy Świat. It is a return to the roots of Polish cuisine enriched with international flavours. Let's get to know the cuisine of our ancestors, who derived their love of flavours from their travels around the world. While we take you on this culinary journey, we ask you to take advantage of our hospitality and let us transport you into the world of 1920s Warsaw and the fun that New World enjoyed during that period.
The cuisine of BI BA Bo is created by the team of Piotr Kałasko, who was Modest Amaro's sou-chef for 7 years. The history on the plate is complemented by the original BI BO BO cocktail, whose recipe was created by famous Polish sommeliers. Our original drink is inspired by the flavours of Ernest Hemignway.

History

At the turn of the 19th and 20th centuries, Nowy Świat was the theatre, cabaret and revue centre of Warsaw at that time. It was also here that the first crowd-pleasing cinemas were established, of which there were as many as 7. At 19 Nowy Świat, in 1913, the cabaret ‘Bi Ba Bo’ was created in the Kossakowski palace in the coat of arms room. In 1916, the famous Pola Negri performed here in a dance with snakes. Bi Ba Bo became one of the most visited attractions in Nowy Świat and was long remembered by Varsovians. It was mentioned in the song ‘Her first ball’ from 1942, performed by Wiera Gran with music by Władysław Szpilman.

The BI BA Bo restaurant has a song. It was created by Zbigniew Rymarz, who wrote the lyrics to it, and the melody was taken from Harry Akst's ‘Qui Pro Quo’ from the 1926 revue ‘Pomalutku, aż do skutku’.

The song BI BA BO was sung by Piotr Fronczewski, an artist with a unique voice, an outstanding film and theatre actor, star of Kabaret pod Egidą and Kabaret Olga Lipińska, among others.

The accompaniment was provided by Bogdan Hołownia, a well-known jazz musician who has worked with famous stars of the jazz scene: Ewa Bem, Urszula Dudziak or Michał Urbaniak. He also worked with Jan ‘Ptaszyn’ Wróblewski.
